I once did a thing where I went on a raw foods diet for a month. In my raw foods ‘cookbook’ was a complex recipe for burritos where lettuce = tortillas, eggplant = refried beans, etc etc… basically every fixing had its veggie counterpart. so, i don’t think the idea is new. although, its value is debatable.
Instead of getting a lettuce “taco”, why not just go to a thai restaurant and get lettuce wraps — because after all, a taco without a taco shell isn’t really a taco, is it.
Well, it’s convenient for people with gluten allergies.
Corn tortillas are already gluten free.
